A very simple salad that you can find most anywhere; fast food chains and high-end restaurants alike. The key for me is to have a very good Ginger dressing. I have not yet been able to make one from scratch that I really like. When I do, it will be added to the recipe.

Preparation Time: 30 minutes    Serving Size: 4

  • 5 ounces Mesculin Mix or other bitter greens
  • 2 large cooked chicken breast halves
  • (1) 15 ounce can mandarin oranges, drained
  • 4 ounces packaged fried rice noodles
  • 1/2 cup sliced almonds
  • Ginger-sesame dressing
Rinse and spin greens and distribute between 4 chilled bowls. Slice cooked chicken breasts into 1/2 inch pieces and place on greens along with the mandarin oranges, rice noodles and sliced almonds. Top with dressing.
